Hijiki & Tofu
1/4 cup dried hijiki
1 serving of pan fried tofu
2/3 cup dashi
1 tablespoon sake
1 tablespoon mirin
1 tablespoon shoyu
1 teaspoon brown sugar
1 1/2 teaspoons canola oil
1. Soak hijiki in luke warm water, until tender, about 30 minutes. Drain and rinse in a fine mesh strainer.
2. In a small saucepan, fill with water, and bring to a boil. Add the pan fried tofu, and gently simmer for 1 minute, then drain. This removes any excess oil. Cut each piece diagonally, then slice into thin strips.
3. Combine dashi, sake, mirin, soy, and sugar in a small bowl to dissolve sugar.
4. Heat oil and when hot, add hijiki and saute for 5 minutes, then stir in tofu strips.
5. Add the dashi mixture, reduce heat to medium-low, and simmer until liquid has evaporated (10 to 15 minutes). Transfer to a serving dish.
